Lemon Drizzle Cookies

I love anything made with lemon. Traditional lemonade, lemon curd tarts, lemon cheesecake. You name it and I want to eat it.

I tend to bake a lot of cookies for school lunches and began to experiment with the idea of lemon cookies. I think I’ve hit upon a seriously delicious lemon cookie recipe! Think a crumbly vanilla bean and lemon zest flavoured cookie topped with a tangy yet sweet lemon glaze. It’s perfect for an afternoon tea treat with a hot cuppa.

Grab your ingredients and let’s get baking!

You will need:

  • 2 cups plan flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Grated lemon zest and juice of one lemon
  • 115g  unsalted butter at room temperature
  • 1 cup caster sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Lemon Drizzle:

  • 2 cups caster sugar
  • Grated lemon zest and juice of one lemon
  • 1 teaspoon butter, melted
  • Boiling water

How to:

  1. Preheat your oven to 180 degrees.
  2. In a medium bowl, whisk together flour, baking soda, salt, and lemon zest.
  3. In a large bowl, using an electric mixer, beat butter and caster sugar until mixed. The longer you beat the mixture, the more your cookies will spread.
  4. Add egg, vanilla, and lemon juice and beat until combined. With mixer on low, beat in flour mixture.
  5. Spread cookies with lemon glaze while still hot and let set, about 1 hour.
